First school for organic bakers in Italy

In Bologna, the first school for operators specialized in organic bakery has opened its doors. The association Pasta Madre has launched the initiative to address people who intend to open a bakery in their town, bakers who work the conventional way and want to convert to organics and people who are looking for different job opportunities, reports Suolo e Salute. The basis of the course are the fundamentals of preparing bread, followed by bread dough for several special breads like with emmer and kamut, bread with seeds, etc. Cakes, pizza, pies and other baked goods are also prepared. Between the stages of processing the course will teach some theory like the principles of healthy nutrition.
The school is located at Villa Torre at Ozzano dell'Emilia (Bologna), a former residence which was renovated with a wood-burning oven. The first course started on October 4, 2008, and the next one will be held in November.
